Homemade ricotta cheese


Tonight I made ricotta cheese. We have LOTS of milk in our fridge. I separated the two doelings from their momma this week so now I'm milking two goats 2x a day. I also made butter for the first time this week. I didn't take a picture of it, so next time I will. It was very white! But, I don't mind the change in color as it was VERY good! I only had a little bit of cream on the top of my milk jars so I only made a little bit, but I hope to make some more soon.
I'll use the ricotta cheese for making lasagna or stuffed shells...hmmm, now I'm getting hungry!

By the way, did you use rennet of some sort or vinegar or lemon juice?
